Family-owned and located a mere four kilometers from the CBD, Hawthorn Estate continues a long tradition of agriculture in the area. Our vines are carefully trellised, hand-tended and hand-picked to maximize yield and enhance ripening. Our vineyard is not irrigated, relying instead on natural rainfall to concentrate sweetness levels and intensify flavour.

Produced in collaboration with Kilchurn Wines, the hand-crafted Coppin Sparkling is a blend of our twenty-year-old Chardonnay, Pinot Noir and Nebbiolo vines.
The Pinot Noir exerts rich structure and complexity, with the small addition of Nebbiolo to provide a raspberry-like mystery to the aroma. The Chardonnay delivers light floral aromas and a creamy mouthfeel with a touch of crème brûlée and brioche on the palate.
With a delicate bead, this grand vintage is aged on lees for a minimum of 36 months undergoing secondary fermentation within the bottle. This delicate sparkling wine has a fine line of crisp acidity, a silky palate and delicious minerality.
